I wasn't always a big fan of Valentine's Day growing up. Henry, I wasn't always a big fan of Valentine's Day growing up… It felt like there was always pressure to "have" a Valentine! But over the years, I turned it into a celebration for ALL the people I love… Whether it's my wife… an old friend… my kiddos… It's a day to remind our loved ones just how special they are. And one of my favorite ways to do that… Is through FOOD. So today, I'm sharing a SUPER easy gift you can make right at home: My Chocolate Hazelnut Cookies | | But unlike conventional cookies — this recipe isn't loaded in sugar, soy, or unhealthy palm oil. Instead, it's rich in protein, high in polyphenols, and packed with flavor. Even better — these guilt-free cookies are quick, easy, and fun to make with people you love | | Dr G's Chocolate Hazelnut Cookies Ingredients (makes 12-14 cookies):  - 2 cups toasted hazelnuts (or 1 cup 100% hazelnut butter)
- 2 pastured or omega-3 eggs
- 1 teaspoon extra virgin olive oil
- 2 teaspoons powdered stevia or 1 Tablespoon Allulose
- 1 teaspoon vanilla extract
- ¼ teaspoon sea salt
- ½ cup unsweetened natural cocoa powder (not dutch)
- 2 Tablespoons coconut flour
- 1 teaspoon baking soda
- 3 oz chopped bittersweet chocolate (at least 72% cacao)
Instructions: - Preheat your oven to 325F. Then, oil a cookie sheet (or line it with parchment) and set it aside.
- If you're using whole hazelnuts, grind them in a food processor or blender until you achieve the consistency of peanut butter, which may take a few minutes. If you're using hazelnut butter, measure 1 cup into a large mixing bowl.

Whisk your hazelnut butter with the eggs, olive oil, stevia or Allulose, and vanilla extract until they're well combined. -
Now sift the sea salt, cocoa powder, coconut flour, and baking soda into the hazelnut mixture and stir everything together until it's combined. -
Add your chopped chocolate, stir well, and then divide the mix into tablespoon-sized balls (about the size of half a golf ball). You should end up with around 12-14 cookie dough balls. -
Bake them for 5 minutes and flatten with a spatula if you prefer flatter cookies. Then cook them for an additional 5-7 minutes, until they're firm on top. -
Remove, let cool, serve, and enjoy! | | In addition to being a thoughtful and delicious gift… The dark chocolate in these cookies is packed with polyphenols and the hazelnuts have healthy fats that are great for your heart! If cookies aren't your speed… I also recommend classic chocolate-covered strawberries! Just melt a few bars of dark chocolate, dip your strawberries in, and lay them on parchment paper on a cookie sheet. Pop them in the fridge and voila — you've got a sweet treat anyone would love. Sometimes I mix it up and throw some blueberries in there… Or crush up some pistachios and crumble them on top of the strawberries before they go into the fridge.
