Hey Henry,
It was great meeting you today. BIBIBOP is the name of that company I was telling you about. Basically they offer an entirely safe space for Celiacs as well as other allergens. They are more health conscious but the food is delicious so anyone would like it honestly. I would say they offer an asian inspired build your own bowl meals.
It has been at least 15-16 years since I've stepped foot somewhere with the convenience of a fast meal (or not having to cook everything from scratch at home) and more importantly something where anything I see is 100% safe to eat; and there's so many more people just like that in Topeka. There are at least 4-5 locations in the Kansas City area but we have nothing like this here. If you know of anyone to network with or that would be interested in bringing a business like this to Topeka it would be such a huge deal for the celiac community, let alone the Topeka community as a whole, having a different option for eating out and offering more jobs. Also thank you for the suggestion on Dr. Gundry, I am doing some research into him and plan to grab his book. I'm all about trying to heal and become healthy naturally and it is extremely true that our gut, or what is going on within the microbiome can affect the whole body.
